Living beer is a label I am adding to any of my, non pasteurized, soured or brett beers to promote the idea that the beer will change with time. These beers have microorganisms that will continue to evolve and change the beer over time. The concept: if you drink one of my living beers young, then again after a year or so, your drinking notes should be different. The degree of difference will rely on a multitude of factors, some controlled and some not.
I do not believe this is a new or revolutionary concept, however, I do like to share some level of beer geekdom to anyone interested in trying some of my funkier beers. If a handful of folks come to understand an appreciate what changes occur in a beer over time, and the intentional choices the beer maker selects in creating the beer, then perhaps this will lend itself to yet another fine beer advocate.
